Ingredients
  

For the Pudding
  • 1/2 cup Granulated Sugar
  • 1/4 cup Cornstarch
  • 1/4 tsp Salt
  • 3 cups Whole Milk
  • 2 tbsp Butter
  • 2 tsp Vanilla Extract
For the Layers
  • 1 box Vanilla Wafer Cookies (11 oz) (use an egg free brand)
  • 4 Ripe Bananas (sliced)
For the Topping
  • 1 1/2 cups Cold Heavy Cream
  • 1/4 cup Powdered Sugar

Method
 

  1. Whisk the sugar, cornstarch and salt in a saucepan, then gradually whisk in the milk until smooth.
  2. Cook over medium heat, whisking constantly, until the pudding is thick and bubbling, about 8 minutes, then cook 1 minute more.
  3. Remove from the heat and stir in the butter and vanilla. Press plastic wrap onto the surface and cool for 20 minutes.
  4. In a trifle dish or 9x9 inch dish, layer half the wafers, half the banana slices and half the pudding, then repeat the layers.
  5. Cover and chill for at least 4 hours so the wafers soften into a cake like texture.
  6. Whip the cold heavy cream with the powdered sugar to soft peaks and spread over the top.
  7. Just before serving, garnish with crushed wafers and a few fresh banana slices.
