Ingredients
  

For the Fritters
  • 2 cups All Purpose Flour
  • 1/4 cup Sugar
  • 2 1/2 tsp Baking Powder
  • 1 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 3/4 cup Milk
  • 1/4 cup Plain Yogurt
  • 2 tbsp Unsalted Butter, melted
  • 1 tsp Vanilla Extract
  • 2 cups Granny Smith Apples, peeled and diced small (about 2 large)
  • 4 cups Vegetable Oil (for frying)
For the Glaze
  • 1 1/2 cups Powdered Sugar
  • 3 tbsp Milk
  • 1/2 tsp Vanilla Extract

Method
 

  1. Heat 2 inches of oil in a heavy pot over medium heat to 350°F. A thermometer really helps here, so keep the oil between 340-350°F while frying.
  2. Whisk the flour, sugar, baking powder, cinnamon, and salt in a large bowl. In a separate bowl, whisk the milk, yogurt, melted butter, and vanilla.
    Pour the wet into the dry, stir into a thick batter, and fold in the diced apples.
  3. Carefully drop 1/4 cup portions of batter into the oil and flatten each slightly with the back of a spoon. Fry only 3-4 at a time so the oil stays hot.
  4. Fry for 2-3 minutes per side, flipping once, until deep golden brown all over.
  5. Transfer to a wire rack and let drain for 5 minutes.
  6. Whisk the glaze until smooth, dip the top of each fritter (or drizzle generously), and let set for 10 minutes until the glaze turns crackly.
