  • 2 cups Pitted Sweet Cherries
  • 1 tbsp Unsalted Butter
  • 1/2 cup All-Purpose Flour
  • 3 tbsp Cornstarch
  • 1/3 cup Granulated Sugar
  • 1/4 tsp Fine Sea Salt
  • 1 cup Whole Milk
  • 1/2 cup Heavy Cream
  • 1/2 cup Plain Greek Yogurt
  • 2 tbsp Unsalted Butter, Melted
  • 2 tsp Vanilla Extract
  • 1/4 tsp Almond Extract
  • 1 tbsp Powdered Sugar

Method
 

  1. Preheat the oven to 350°F and coat a 9-inch baking dish with the 1 tablespoon of butter. Arrange the cherries evenly across the bottom.
  2. Whisk the all-purpose flour, cornstarch, granulated sugar, and salt together in a mixing bowl.
  3. In a separate bowl, whisk the milk, heavy cream, Greek yogurt, melted butter, vanilla, and almond extract until smooth.
  4. Gradually whisk the wet mixture into the dry ingredients until a smooth, pourable batter forms. Pour the batter evenly over the cherries.
  5. Bake for 38 to 45 minutes, until the edges are golden and puffed and the center is set with only a slight wobble.
  6. Cool for 20 minutes so the custardy center can settle, then dust evenly with the powdered sugar before serving warm or at room temperature.
