For The Cake
  • 2 1/4 cups All-Purpose Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Fine Salt
  • 2 tsp Ground Cinnamon
  • 1 cup Granulated Sugar
  • 1/2 cup Light Brown Sugar
  • 1 cup Plain Greek Yogurt
  • 1/2 cup Neutral Oil
  • 1/2 cup Whole Milk
  • 2 tsp Vanilla Extract
  • 2 1/2 cups Peeled Diced Apples
For The Topping
  • 2 tbsp Granulated Sugar
  • 1/2 tsp Ground Cinnamon

Method
 

  1. Heat the oven to 350°F. Grease a 9-inch springform pan and line the bottom with parchment.
  2. Whisk the all-purpose flour, baking powder, baking soda, fine salt, and ground cinnamon together.
  3. In a second bowl, whisk the granulated sugar, light brown sugar, Greek yogurt, neutral oil, whole milk, and vanilla extract until smooth.
  4. Fold the dry ingredients into the wet mixture just until combined, then fold in the diced apples. Spread the thick batter evenly in the prepared pan.
  5. Mix the granulated sugar and ground cinnamon for the topping and sprinkle it over the batter.
  6. Bake for 45 to 55 minutes until the center springs back and a tester comes out without wet batter. Cool in the pan for 20 minutes, then release the sides and cool until warm before serving.
