Eggless Molten Chocolate Lava Cakes

There is something special about cutting into a chocolate cake and watching the warm center flow out onto the plate. These molten lava cakes give you that exact moment every single time.

The best part is that they are completely eggless, so they work for anyone who avoids eggs or simply ran out. You get all the rich, gooey texture without needing a single egg.

I use a simple chocolate ganache ball placed right in the middle of the batter. As the cakes bake, that ganache stays soft and creates the molten center everyone loves.

They only take a few minutes to prepare and about 13 minutes to bake. That makes them a great option when you want a fancy dessert without a lot of effort.

Dust them with a little powdered sugar and serve them right away while the middle is still warm and melty.

Why You’ll Love It

Rich Chocolate Flavor – Cocoa batter and semisweet ganache create deep chocolate flavor in every warm spoonful.

Perfect Molten Center – Chilled ganache melts into a smooth, creamy center while the cake stays soft around it.

Step 6

Bake for 13 to 14 minutes, until the edges are set but the centers still look slightly soft.

Tips

Make Firm Ganache Centers

Heat the cream only until it is steaming, not boiling, before pouring it over the chocolate chips. Let it sit for a minute, then stir slowly until the mixture is completely smooth.

The ganache should be thick enough to scoop after chilling. If it still feels soft, chill it a little longer so the centers hold their shape while you add the batter.

Keep The Centers Cold

After shaping the ganache into four balls, place them back in the refrigerator while you prepare the batter. Cold centers are less likely to blend into the batter before the outside has time to bake.

Try to make the balls similar in size so each cake gets the same amount of molten chocolate. A small cookie scoop works well for portioning the ganache evenly.

Measure The Batter Evenly

Use the same amount of batter below and above each ganache ball. Filling the ramekins halfway first gives the center enough space to stay surrounded by cake.

Keep the ganache in the middle and cover it completely with the remaining batter. Any exposed chocolate can stick to the ramekin and make the cakes harder to turn out cleanly.

Questions You Might Have

Can I prepare these eggless lava cakes ahead of time?

For the best molten centers, bake the cakes shortly after assembling them. You can prepare the ganache centers up to 3 days ahead and keep them covered in the refrigerator.

If you refrigerate the filled ramekins before baking, they may need a few extra minutes in the oven. Watch for set edges and slightly soft centers rather than relying only on the listed baking time.
