Baked oatmeal is one of my favorite things to make when I want a warm, comforting breakfast ready for the week.
This eggless blueberry baked oatmeal is soft in the center, lightly sweet, and packed with juicy berries in every single bite.

Most baked oat recipes rely heavily on eggs to hold everything together, which can be tough if you have an egg allergy or simply do not eat eggs.
In this version, a little ground flaxseed and Greek yogurt do the job instead, giving you clean slices without any egg taste or texture issues.
It takes only a few minutes to mix up before the oven does the rest of the work for you.
Why You’ll Love It
Perfect Soft Texture – Ground flaxseed and Greek yogurt create a soft, cake-like slice that holds together without any eggs.
Juicy Berry Pockets – Fresh blueberries burst during baking to fill every single bite with warm, sweet fruit juice.

Bright Lemon Flavor – Fresh lemon zest adds a sunny citrus aroma that balances the rich maple syrup beautifully.
Crispy Sugar Crust – Brown sugar sprinkled on top melts in the oven into an irresistible, sweet golden crust.
Ingredient List
- 2 cups Old Fashioned Rolled Oats
- 1 tsp Baking Powder
- 1 tsp Ground Cinnamon
- 1/2 tsp Salt
- 1 1/2 cups Milk
- 1/2 cup Plain Greek Yogurt
- 1/3 cup Pure Maple Syrup
- 1/4 cup Unsalted Butter, Melted
- 1 tbsp Ground Flaxseed
- 2 tsp Vanilla Extract
- 1 tsp Lemon Zest
- 1 1/2 cups Fresh Blueberries
- 2 tbsp Brown Sugar
Directions
Step 1
Preheat the oven to 375°F and grease an 8×8 inch baking dish with butter or nonstick spray.
Step 2
In a large bowl, stir together the oats, baking powder, cinnamon and salt.
Step 3
In a separate bowl, whisk the milk, Greek yogurt, maple syrup, melted butter, ground flaxseed, vanilla and lemon zest until smooth. Pour it over the oat mixture and stir well.
Let the mixture sit for 10 minutes. This gives the oats a head start on softening and lets the flaxseed thicken the liquid, which helps the oatmeal set into soft, sliceable squares without eggs.
Step 4
Fold 1 cup of the blueberries into the oat mixture and spread it evenly in the baking dish. Scatter the remaining blueberries over the top and sprinkle with the brown sugar.
Step 5
Bake for 35-40 minutes, until the center is set and no longer jiggly and the edges are golden and bubbling.
Step 6
Let the baked oatmeal rest for 10 minutes to firm up before cutting into squares. Serve warm with a splash of cold milk or an extra drizzle of maple syrup.

Tips
Stick to Old-Fashioned Rolled Oats
I recommend sticking strictly to old-fashioned rolled oats for this bake. They give you a nice, chewy bite that holds up well in the oven.
If you swap them for quick oats, they absorb the liquid too quickly and turn into a dense, mushy block instead of clean squares.
Do Not Skip the Ten-Minute Rest
Because this is an eggless recipe, that 10-minute resting step before baking is absolutely essential. The ground flaxseed needs that liquid time to swell up and create a natural binding gel.

If you rush and put the dish straight into the oven, the squares will crumble apart the moment you try to slice them.
Let the Melted Butter Cool Down
From my experience, you should let your melted butter sit on the counter for a few minutes so it is not piping hot when you mix it in.
If you pour hot butter directly into cold milk and chilled Greek yogurt, the butter will immediately harden into little solid clumps. Having your wet ingredients closer to room temperature makes everything blend smoothly.

Because this is an eggless recipe, the ground flaxseed and oats need time to absorb liquid and form a light gel.
This quick rest is the secret to getting clean, sliceable squares that hold their shape without falling apart.
