Lemon and blueberry is one of my favorite flavor combinations to bake with, especially on a quiet weekend morning.
These eggless lemon blueberry scones bake up soft and flaky on the inside, with lightly golden edges and juicy bursts of fruit.

If you cannot eat eggs due to an allergy or simply prefer baking without them, this recipe is a great option that does not compromise on texture.
Cold butter and heavy cream do all the work here, so you do not need any eggs to get that classic bakery style lift.
A quick lemon glaze on top adds just the right amount of sweetness and a fresh citrus kick to finish them off.
Why You’ll Love It
Bright Flavor – Rubbing lemon zest into the sugar creates an intense citrus aroma that instantly brightens every single bite.
Juicy Blueberries – Using frozen berries keeps them intact so they burst with fresh sweet fruit flavor inside the oven.

Flaky Layers – Grating frozen butter directly into the flour creates pockets of steam for tall, incredibly flaky layers.
Melt In Your Mouth Texture – Cold heavy cream delivers pure rich moisture to keep the crumb wonderfully tender without needing any eggs.
Ingredient List
For the Scones
- 2 cups All Purpose Flour
- 1/3 cup Granulated Sugar
- 1 tbsp Lemon Zest
- 1 tbsp Baking Powder
- 1/2 tsp Salt
- 1/2 cup Unsalted Butter, Frozen
- 3/4 cup Heavy Cream, Cold
- 1 tsp Vanilla Extract
- 1 cup Frozen Blueberries
- 2 tbsp Heavy Cream, For Brushing
- 1 tbsp Turbinado Sugar
For the Lemon Glaze
- 1 cup Powdered Sugar
- 2 tbsp Fresh Lemon Juice
- 1 tsp Lemon Zest
Directions
Step 1
Preheat the oven to 400°F and line a baking sheet with parchment paper.
Step 2
In a large bowl, rub the sugar and lemon zest together with your fingertips until fragrant. Whisk in the flour, baking powder and salt.
Step 3
Grate the frozen butter directly into the flour mixture using the large holes of a box grater. Toss with your fingers until the butter pieces are coated and the mixture looks like coarse crumbs.
Step 4
Whisk the cold heavy cream and vanilla together, then pour into the bowl and stir with a fork until a shaggy dough forms. Gently fold in the frozen blueberries.
The dough should look slightly rough, and handling it as little as possible is what keeps the scones tender.
Step 5
Turn the dough onto a floured surface and pat it into a 7-inch circle about 1 inch thick. Cut it into 8 wedges and place them 2 inches apart on the baking sheet.
Brush the tops with heavy cream and sprinkle with turbinado sugar. Chill the scones for 15 minutes so the butter firms up, which helps them rise tall and flaky.
Step 6
Bake for 18-22 minutes, until golden brown on top and cooked through. Let them cool on the pan for 10 minutes.
Step 7
Whisk the powdered sugar, lemon juice and lemon zest into a thick but pourable glaze. Drizzle it over the warm scones and let it set for 10 minutes before serving.

Tips
Keep the Butter Completely Frozen
Because this is an eggless recipe, cold butter is doing all the work to create flaky layers. I recommend keeping your stick of butter in the freezer until the very second you are ready to grate it.
If the butter gets warm and starts melting into the flour, your scones will turn out flat and heavy instead of tall and flaky.
My favorite trick here is to coat the grater with a little flour so the butter shreds slide right off without sticking.
Rub the Lemon Zest into the Sugar
You will get the best results if you spend a full minute rubbing the lemon zest and granulated sugar together with your fingertips.

The coarse sugar crystals draw out the flavorful citrus oils from the zest.
This step spreads bright lemon flavor evenly through the entire dough instead of leaving little clumps of zest in random spots.
Do Not Thaw the Blueberries
Always keep your blueberries in the freezer right up until you gently fold them into the bowl.
If the berries thaw, they release juice that turns your dough dark purple and makes it too wet to handle.
From my experience, rock-firm berries hold their shape much better and stay neatly tucked inside the dough as it bakes.

Questions You Might Have
Can I use fresh blueberries instead of frozen ones?
Yes, you can use fresh blueberries in this eggless recipe, but make sure they are completely dry after washing before folding them in.
Keep in mind that fresh berries break more easily than frozen ones, so work gently so you do not crush them into the dough.
