  • 3 tbsp Heavy Cream
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt

Preheat the oven to 350 F and line a 12 cup muffin pan with paper liners.

Step 2

In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder and salt.

Step 3

Add the buttermilk, vegetable oil and vanilla and whisk until just combined. Pour in the hot coffee and whisk until the batter is smooth and glossy. It will be thin.

Beat the softened butter for 2 minutes until creamy. Sift in the powdered sugar and cocoa powder, add the heavy cream, vanilla and salt, and beat on high for 3 minutes until fluffy and spreadable.

Tips

Measure the Flour Carefully

For the softest cupcakes, spoon the flour into the measuring cup and level the top. Scooping flour directly from the container can pack in too much and make the cupcakes dense.

For even better accuracy, use 150 grams of all purpose flour. This is especially helpful because the eggless batter needs the right balance of flour and liquid to rise properly.

Use Natural Cocoa Powder

I recommend natural unsweetened cocoa powder for these cupcakes. Its acidity works well with the buttermilk and baking soda, helping the cupcakes rise with a light texture.

Fluffy eggless chocolate cupcakes

Sift the cocoa powder before adding it because cocoa often has firm lumps. Once liquid is added, those lumps are much harder to blend into the batter.

Check Your Baking Soda

Fresh baking soda is important in this eggless recipe because it provides much of the rise. If the box has been open for several months, test a small amount with vinegar and make sure it bubbles right away.

Measure the baking soda and baking powder with level spoons. Extra leavener can make the cupcakes rise too quickly and then sink in the center.

Questions You Might Have

Why is the cupcake batter so thin?

The hot brewed coffee makes this chocolate batter thinner than typical cupcake batter, but that helps create soft and moist cupcakes. Whisk until the mixture is smooth and glossy, then fill the liners only two thirds full.

Use freshly brewed coffee that is hot but not boiling, so it blends smoothly without affecting the other ingredients.
