There is something really comforting about the smell of toasted pecans and warm butter in the kitchen.
Today I want to share my recipe for eggless butter pecan cookies, packed with crunchy nuts and sweet toffee bits.

It is completely eggless, which makes it a great option if you have an egg allergy or simply ran out of eggs at home.
You still get that rich, chewy texture you want from a bakery style treat without needing any eggs at all.
Browning the butter right with the pecans gives these cookies an incredible flavor that everyone will enjoy.
Why You’ll Love It
Rich Brown Butter Flavor – Browning the butter creates a deep caramel taste that makes every bite feel bakery-level special.
Toasted Nutty Crunch – Cooking the pecans right in the hot butter makes them extra fragrant and delightfully crunchy.

Irresistible Chewy Texture – Adding cornstarch to the dough ensures these egg-free treats stay super soft and chewy for days.
Sweet Toffee Pockets – Melting toffee bits create delicious pools of caramelized sugar throughout the entire warm cookie.
Ingredient List
- 1/2 cup Unsalted Butter
- 1 cup Chopped Pecans
- 2/3 cup Brown Sugar, Packed
- 1/4 cup Granulated Sugar
- 3 tbsp Milk
- 2 tsp Vanilla Extract
- 1 1/3 cups All-Purpose Flour
- 1 tsp Cornstarch
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Toffee Bits
Directions
Step 1
Melt the butter in a light-colored skillet over medium heat, swirling often, for about 4 minutes until foamy and just starting to turn golden. Add the pecans and cook, stirring constantly, for 2-3 minutes until the butter is deep golden with nutty brown bits and the pecans are toasted.
Pour everything into a large bowl and cool for 15 minutes.
Step 2
Whisk the brown sugar and granulated sugar into the pecan butter until combined. Whisk in the milk and vanilla for about 30 seconds, until glossy.
Step 3
In a separate bowl, whisk together the flour, cornstarch, baking soda and salt. Stir into the butter mixture just until combined, then fold in the toffee bits.
Step 4
Cover and chill the dough for 45 minutes. This firms up the brown butter so the cookies bake thick and chewy.
Step 5
Preheat the oven to 350°F and line two baking sheets with parchment paper. Scoop the dough into 2 tbsp mounds and place them 2 inches apart.
Step 6
Bake for 10-12 minutes, until the edges are golden and the centers are soft and puffy. If the toffee spreads at the edges, gently nudge each hot cookie back into a circle with a large round cookie cutter or the rim of a glass.
Step 7
Cool on the baking sheet for 10 minutes, then transfer to a wire rack. Makes about 16 cookies.

Tips
Use a Light-Colored Skillet
I recommend using a stainless steel or light-colored skillet when browning your butter and pecans. A dark pan makes it almost impossible to see the color changing at the bottom.
You want to catch the exact moment the butter turns golden and the little flecks turn brown. This ensures you get that rich, toasted flavor without burning the nuts.
Cool the Butter Before Mixing
You will get the best results if you let the warm pecan butter sit for the full 15 minutes before adding your sugars.

If the butter is too hot, it will melt the sugars into a greasy liquid. That will make your eggless cookie dough too loose and cause the cookies to spread into flat puddles.
The mixture should feel barely warm to the touch when you whisk in the milk and vanilla.
Do Not Skip the Cornstarch
In this eggless recipe, cornstarch is an essential ingredient for the final texture.
Because there are no eggs to bind the dough, cornstarch helps create a soft, tender center that holds together.
From my experience, leaving it out results in a crumbly cookie that breaks apart much too easily.

Questions You Might Have
How do these cookies hold together without eggs?
The combination of milk, brown sugar, and cornstarch creates the structure that eggs usually provide. Cornstarch keeps the texture tender, while the milk dissolves the sugar to bind the flour together.
This keeps the eggless cookies wonderfully chewy instead of dry or crumbly.
