Breakfast burritos are one of my favorite morning meals because they keep you full for hours.
Traditional versions almost always rely on scrambled eggs, which can be tough if you have an allergy or choose to avoid eggs entirely.

That is why I created these eggless breakfast burritos using a quick, seasoned tofu scramble that gives you the exact same fluffy texture.
I also pack them with crispy potatoes, black beans, avocado, and melted cheese before toasting the outside in a pan.
They are completely egg free, easy to roll up, and perfect for anyone who wants a hearty breakfast without any eggs.
Why You’ll Love It
Real Egg Flavor – A pinch of black salt and turmeric gives the tofu scramble a classic, savory egg taste and bright color.
Soft and Creamy Scramble – Cooking the pressed tofu with butter and milk makes it super fluffy and creamy, never dry or soggy.

Crispy Skillet Potatoes – Pan-frying Yukon Gold potatoes with smoked paprika makes them tender on the inside and crispy on the outside.
Toasted Golden Wrap – Toasting the rolled burritos in a hot pan melts the cheddar cheese and gives the tortilla a great crunch.
Ingredient List
For the Tofu Scramble
- 14 oz Extra Firm Tofu
- 1 tbsp Unsalted Butter
- 1/2 tsp Ground Turmeric
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 3 tbsp Milk
- 1/2 tsp Kala Namak (Black Salt)
For the Potatoes
- 2 medium Yukon Gold Potatoes, Diced
- 2 tbsp Olive Oil
- 1/2 tsp Smoked Paprika
- 1/2 tsp Salt
For Assembly
- 4 large Flour Tortillas (10 Inch)
- 1 cup Shredded Cheddar Cheese
- 1 can (15 oz) Black Beans, Drained & Rinsed
- 1/2 cup Salsa
- 1 large Ripe Avocado, Sliced
- 2 Green Onions, Sliced
Directions
Step 1
Wrap the tofu in a clean kitchen towel and set a heavy pan on top. Let it press for 15 minutes to remove excess water, which helps the scramble turn fluffy instead of soggy.
Step 2
Heat the olive oil in a large nonstick skillet over medium heat. Add the diced potatoes, smoked paprika and salt, then cover and cook for 8 minutes, stirring occasionally.
Remove the lid and cook for another 6-8 minutes, until the potatoes are tender inside and golden and crispy outside. Transfer them to a bowl.
Step 3
Melt the butter in the same skillet over medium heat. Crumble the pressed tofu into the pan with your hands in uneven, bite-sized pieces and cook for 5 minutes, until lightly golden in spots.
Step 4
Sprinkle in the turmeric, garlic powder, onion powder, salt and pepper and stir until the tofu is evenly golden yellow. Pour in the milk and cook for 1-2 minutes more, until the scramble looks soft and creamy.
Take the pan off the heat and stir in the kala namak. Adding it at the end keeps its savory, egg-like flavor strong.
Step 5
Warm the black beans in a small saucepan or in the microwave. Warm the tortillas in a dry skillet for about 15 seconds per side so they are soft and easy to fold.
Step 6
Sprinkle the cheese down the center of each warm tortilla, then layer on the potatoes, tofu scramble, black beans, salsa, avocado and green onions. Fold in the sides and roll each burrito up tightly.
Step 7
Place the burritos seam side down in a clean skillet over medium heat. Toast for 2-3 minutes per side, until golden and crisp and the cheese is melted inside, then serve right away.

Tips
Add the Black Salt at the Very End
I’ve found that kala namak loses its signature egg-like flavor if it cooks too long over direct heat.
You’ll get the best results if you stir it in right after taking the pan off the stove. The leftover warmth blends the seasoning in while keeping the savory taste fresh and distinct in this eggless recipe.
Cut the Potatoes into Small Uniform Cubes
For this eggless recipe, I recommend cutting your Yukon Gold potatoes into neat, half-inch pieces.

Keeping the dice small and uniform helps them cook through during the covered stage without drying out.
When you remove the lid, the flat edges will brown evenly and turn pleasantly crisp on all sides.
Leave the Tofu in Uneven Chunks
When crumbling the pressed tofu into the skillet, avoid breaking it into tiny crumbs or a paste.
From my experience, tearing it by hand into irregular, bite-sized pieces creates the best texture.
These varied pieces hold onto the warm milk and seasonings, giving your filling a tender bite that feels like a classic scramble.

Questions You Might Have
What is kala namak and is it necessary for this recipe?
Kala namak is a black mineral salt that gives the tofu scramble an authentic eggy flavor and aroma in this eggless recipe.
You can use regular table salt if you cannot find it, but the scramble will lose that classic breakfast egg taste.
